Do garbanzo beans stay crunchy when fully cooked? Is an hour long enough to simmer them?
You can vary the hardness a little bit though. I personally like them very soft, so I simmer them about 2 1/2 hours. Less simmer time and they will be a little more "al dente".
On edit: That is the simmer time *after* I soak them overnight.

(15,126 posts)You have to cook them twice. Soak overnight. Boil for 2 hours (or so). Then toast in a low oven for ever. Not necessarily a simple task.

(9,984 posts)but they should hold their shape. I'm starting to use my Instant Pot for beans, the way my daughter does for rice. She says she could never get rice right (I used the Asian method of measuring water to rice, up to the middle of my index finger, and it worked for me, until I got my rice cooker.). I got tired of having to plan beans the night before.
