What's for Dinner, Mon., Jan. 2 2023

Apple-cranberry slaw using Savoy cabbage. I used poppyseed dressing. Toasted almonds will go over the top.

BBQ pork on Brioche roll.

Square of white chocolate for dessert, along with French decaf.

1. Leftover pork loin, cabbage and black eyed peas...

I swapped out cabbage for the collards I usually make on NYD and now there's not much left. I usually have greens to eat for days! But I had a cabbage to use up and so I roasted it.

mashed potatoes, steamed broccoli smothered in cheddar cheese. Not much of a dessert eater.

We're finishing off the pork loin roast and sauerkraut, with baked mashed potatoes. Husband is also having black-eyed peas. (Need to finish it off so I have room to get the yogurt in there tonight when it's done.)

I made what we call “ taco lasagne” , warmed burritos instead of noodles. And the layers are your taco favorites.layer it, in the oven, warm it, add the cold taco toppings. Lots of cheeses involved.easy to make, save, freeze.
And after all LilBit ate, she finished it off with chocolate donut holes.

Sort of a New Year's Day tradition. All those years of the band playing & our party starting at 2:30 in the morning.
No cooking required.

I like to keep a bag of Trader Joe's frozen shrimp around for quick dinners. Two or three shrimp, pasta, and a couple of spoons of Costco's pesto make a quick meal. And pears for dessert
