A most simple yet delicious dessert: Semolina-porridge with caramelized steamed fruits.

The semolina-porridge: (serves 2)
* a heaped teaspoon of butter
* 500 ml milk
* ~100 g sugar
* a pinch of salt
* 100 g semolina-flour

The ratio of liquid to semolina depends on how thick you want it and how fine the grind of the semolina is. I like a coarse grind, even though traditionally a fine grind is used for desserts. I suggest a ratio by weight of 5:1

1. Slowly melt and brown the butter in a small pot. Add the milk, sugar and salt, bring to boil. When boiling, add the semolina. Reduce the heat and keep stirring. It will be done in 5 minutes.





The fruits
* a few handfull of fruit, washed, diced (I don't recommend mixing them)
e.g. apples peeled, cored, diced
e.g. plums, whole or halved
e.g. orange-filets (if you want to get fancy)
* 2 tablespoons of sugar
* optional: cardamom-seed, cinnamon-stick, nutmeg...

1. Cover the bottom of your pot with a thin, even layer of sugar. Add about a shot-glas worth of water. Bring to boil and let it caramelize.

2. Add the fruits and the seasoning. (There is no need to add any liquid.) Lid on top. Reduce the heat. Let it steam for a few minutes, then stir, then put the lid back and just let the fruits steam/boil in their own juices until soft. There will be plenty of thickened juice by the time they are done.
