What's for Dinner, Sun., Feb. 19, 2023

Soy-and-Ginger-Glazed Salmon with Udon Noodles.

I found the recipe online even though I have at least one good Japanese noodle cookbook. Trouble is that this cookbook wants me to use Mentsuyu Sauce and dashi broth, neither of which I have. And I am way, way too lazy to drive out to the Asian market to get it.

Cantalope, blueberries, and apple fruit bowl with Earl Grey tea for dessert.

The grapes end up caramelized.

Sprinkle with chopped toasted almonds.

Side of frozen broccoli.

Wonderful.

rosemary and a bit of fig jam…fresh mozzarella. Big tossed salad on the side. I’ll open a nice Oregon Pinot noir to go with it.

Curry chicken meatballs, falafel, whipped feta and yogurt dip, flat bread, olives, mango pickles, cherry tomatoes and sliced cucumbers.

New recipe for us tonight. Valentine's Day is the anniversary of our first date (26 years) and this coming Saturday is husband's birthday, so wanted to do something special for dinner and we didn't want to wait until next weekend, hence the cheesecake.

When it was still excellent, we used to go to Carrabba's for special occasions. Having grown up in an Italian family on my paternal side, and having eaten great Italian food all my life, Carrabba's was the one place I could go and not be disappointed. (The one in our area wasn't as good anymore the last time we went pre-pandemic.)

Anyway, we always started with a serving of their Cozze in Bianco: mussels in a white wine lemon butter garlic sauce. My favorite was their Pollo Rosa Maria: grilled chicken breast stuffed with fontina cheese and prosciutto with mushrooms and lemon butter sauce (their take on a piccata); and husband had a few favorites, but he really liked their Chicken Bryan: grilled chicken breast with sun-dried tomatoes and goat cheese with lemon butter sauce.

So, I got some mussels (all I could get were frozen) and everything I need to make Chicken Bryan. Except we won't be grilling, probably going to sear the breasts (that are marinating right now) in the cast iron skillet and then throw them in the oven.

Cozze in RED sauce favorite of mine (and Dad's,) and last time had a GOOD one was in DC's long ago closed Les Halles, near my old office across from Old Post office Pavilion. Treated Dad who was visiting at the time. Good Steak Frites too!

Because I'm temporarily in a wheelchair, which severely limits my cooking, today we fell back in a quick dinner we used to make a lot back when I was a working mother with kids to feed.

You need a rotisserie chicken, flour tortillas, green onions, and a jar of duck sauce. Warm a tortilla in the microwave, add chicken, chopped green onion, and duck sauce, wrap and enjoy.

TJ is working tonight. I'm foraging leftovers.

So far it is just the six hot wings with some blue cheese dressing.

I'm not sure I'm having anything else, but I've got salad, cheese and fruit if I need more later.

Low carb ice cream too!

We got to Daytona the other day and our friends had tickets to Sunday’s Daytona 500! I had never seen an auto race before and it was loud, crowded and long. The introductions, a couple of minor accidents and the ending were fun, though.

The food was terrific. I had a fried shrimp platter with fries and cole slaw while the First Mate had an oyster Po’ Boy. Southern seafood at its finest!
