You might crumble it up and put some in your grits. It's not as good as shrimp, but it's good nonetheless.

I have some chili in the freezer - Because I only know how to make chili in 5-gallon batches.

So it's off to the store for some hominy and cheddar I go.

garlic, peppers, and Italian spices and serving with polenta topped with parmesan. Pretty much the same thing!

Looks good. A local market has really good pulled pork BBQ with some au jus I might make the
short rib dish with that. Or maybe with the short ribs. The eggs benny and grits looks good too.

BTW are grits supposed to be runny?

that can be formed and/or sliced or fried as patties or as thick, buttery polenta that can be spooned up like mashed potatoes, sweet potatoes, or butternut squash. I like to make grits thick then thin it some with milk, butter, and sugar at breakfast, like same as Cream of Wheat.

There's always a good sauce involved. If I was going vegie, mushrooms in a sauce instead.

I'll cut up leftover veggies like asparagus or green beans and add to grits. Chopped up leftover meats. Sauteed mushrooms or just about any type of squash. Just about any cheese shredded. Sausage. Eggs. Bacon. Seafood. Beans. Herbs. Truffles or truffle oil. Olives. Tomatoes. Nuts.

You are really only limited by your imagination. What I do is just raid the refrigerator and/or pantry and put in whatever I can find.

Jerky, sausage, swiss cheese, crawfish - lots of good stuff to add to grits!

Chopped jalapenos, leave seeds in for more heat if desired.

I bet you could come pretty close with some combination of "Better Than Bouillon" ham base and coffee.

... baby #2 and he has been running low on iron and her doctors want her to get the iron through
her diet and so I looked up shrimp and grits. Iron from the shrimp, iron from the butter, iron from
the bacon, iron from the cheese, and iron from the grits along lots of other "good things too."

I've never tried this, but it seems they would go well with a grits and cream. And butter, of course.
