What's for Dinner, Sun., April 30, 2023

Zucchini-feta cheese and lemon salad. Doing zoodles with the zucchini.

Potato Leek Soup.

Soft tortilla shell with eggplant/green pepper/onion filling.

Dessert: strawberry cheesecake ice cream.

2. Canned food

We made it through the south Florida storm unscathed. It was good that we pre-made a couple of meals as the boat rocked and rolled.

We haven’t re-provisioned yet so we’re using canned food for dinner.

Swanson canned chicken cooked in baked beans served with LaSoeur peas. Whole grain bread with butter, (we snitched a few tabs from a restaurant). Dark chocolate and brandy for desert.

Tomorrow morning we’ll go ashore and shop!

4. Shrimp Pillows--new nummy recipe

You take packaged pie dough, lay it out on a baking pan, and cut into 4 wedges. On top, lay cooked/de-tailed shrimp dipped in mayo. I also added some steamed fresh asparagus. Sprinkle with lemon pepper and basil. Small ones, fold a wedge up. Bigger ones like I made, put another wedge on top of the first wedge, and pinch together. Sprinkle with cheese. 10 minutes at 450.

Probably have some coconut cake later with hot tea.

Have a pan of eggplant parm in the oven baking right now to take to my friend who had surgery this week. Going to put together a green salad to go with. Will just be taking it by and giving her a hug, won't be staying.

So, the way this times out, we'll probably be picking up something while we're out, coz I'm not cooking any more tonight.

homemade streusel coffee cake (my first attempt--no too bad, if I say so myself)

will make that with rice, and dry-sauteed string beans on the side. And a green salad, since I still have lettuce to harvest.
