Delicious Summery Roasted Radish Bean Salad Recipe (video)
This recipe is something we only discovered recently, and we're very happy we did. It goes along with the pesto recipe we did last week, and includes some dollops of pesto in its construction. There are a bunch of different elements that all come together to make this delicious and gorgeous salad. Lots of flavour, lots of colour, and lots of different textures, too. For the vinaigrette, you could easily use your favourite bottled Italian dressing from the store, but it's always going to be better if you make it yourself!
We used the radish green pesto we made last week for the pesto, but that is not required, here. You could use store-bought, or make a more standard basil and pine nut pesto as a replacement (since radish greens are not always easy to get). We were a little surprised at how sweet and delicious the roasted radishes were, and they interplay between their tenderness and sweetness and the crispy sharpness of the sliced raw radish was excellent. Add in the richness from the pesto, the creaminess of the beans, the crunch of the toasted pecans, and the tart zing of the vinaigrette, and this salad is just outstanding.
