What's for Dinner, Tues., Jan. 23, 2024

Posting early due to working late.

I'm making another salad from the link I posted about the winter salads: Roasted Cranberry, Squash & Cauliflower Salad. It has cranberries, shallots, and blue cheese over a bed of escarole. Also has cauliflower.

Kombucha: mixing pineapple-peach with my own home brew. Starting a few more gallons of kombucha tonight.

Dessert: well, I am sad to say that I am no longer allowed to have chocolate in the house for a month. My superego said so. I had the entire Tony's chocolate everything bar last night while I stayed up late and watched Billy Meier extraterrestrial predictions. Am I nuts or what?

I am therefore having no desserts for an entire week. I haz a sad.

We're hunkered down for the snow and ice storm and the Landlady has been making a Bolognese sauce all afternoon. It smells delicious! She's using pork, beef and veal, crushed tomatoes, diced celery, carrots & onions, some red wine and garlic, of course. It'll be served on rigatoni with shaved fresh Parmesan.

Caesar salad and garlic bread along with the rest of the wine.

I'll roast some potatoes and steam some broccoli to balance the meat. We still have nearly half the ribs leftover from the other night. They are so meaty that each rib is like a bone-in pork chop; I don't eat more than one.

out and scrape ice on the road in front of our house. There is a hill on the road and people couldn't climb the hill. I been outside on and off all day scraping ice with the bucket and grader blade. The big bowl of hot chili and a brat will taste pretty good this evening.

4. I made a chicken casserole

I had in mind the recipe on the back of the Stove Top Stuffing box, but I don't get Stove Top any more, and I don't used canned soup anymore. So I winged it. I had a crust of bread I baked last week, and turned that into stuffing. I cooked some chicken yesterday, and used the broth to make some cream sauce. I didn't have any sour cream, so I used a little Classic Caesar dressing. It turned out pretty good.

6. Cottage pie.

Actually, I made it yesterday, microwaved leftovers today, and will do the same tomorrow.

The down side about living alone is I get to eat various meals several times in a row. On the other hand, with careful planning each meal usually cost $2.00, sometimes less. So my food bills are relatively small. Leaves me with much more money to purchase alcohol.
