What's for Dinner, Fri.,, Feb. 9, 2024

Posting early because I'll be gone all day and then I have to work late afternoon/early evening.
I'll either pick up some Japanese noodles at the town I'm going to or take a turkey meatloaf out of the freezer.

I fixed Japanese noodles last night but didn't cook them the right way. They were still good, just not as good as they could have been. BTW, avocado and toasted coconut is a good combo, especially when lime is involved.

I overcooked them.

Best Broccoli Salad, oven roasted potatoes and homemade butter fan rolls. We'll be having quite the feast tonight.

We have three varieties of avocado trees and they drop ripe fruit at slightly different times, so avocado season stretches for several months. We also have lime and a couple coconut palms. Life is pretty good to us here on Hawaii Island.
Noodles are best fresh for sure, but I wound up stopping a curry dish midway because there wasn't enough time and so I stuck it and the naan batter in the fridge. Thankfully the next day, yesterday, it all worked out and we had a curried red lentil dish with roasted cauliflower, potato and onion. The spices and flavors worked beautifully with the long delay and the naan was so awesome I'm going to have to do it that way again. I also fashioned a quick chutney from some pear and ginger jam I made last summer.
I can't wait to try the avocado/coconut/lime combo. No avocados for a few more months, though.

I don't have access to much produce at this time of year, in Montana, but we do get avocados and limes and coconut in a variety of forms. I'm having kabobs tonight but I'll be thinking of a way to put that together.

I did something like you did with the curry dish/naan bread a week or so ago and was so impressed with how much better it was that I vowed to work ahead to allow that flavor blending.

Wow, are you ever lucky to have that avocado season!

It is pretty great. We have mango and papaya, too.
I enjoy cooking well and get no complaints! Also, so much better for health.

We're hosting the gaming group today, and chili is something that can be made ahead of time and kept warm in the slow cooker until people decide they want to eat.
