granny smith's apples too. That worked out great but they are not as pretty.

I just doubled the recipe and substituted three big apples for the bananas that should have went in.

Oops. can't find it but you get the idea. Lots of banana muffin recipes out there.

Replace part of the sugar called for with brown sugar and add a good dollop of honey. It makes the bread more moist.

This is what I use. You'll have to get "translations" for the ingredients because the recipe has British measurements.

I wish I knew where I got this recipe or whose it was before I changed it...I would surely give them credit because it's great!

Best Banana Bread

Ingredients
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
2 cups sugar
1 cup softened butter
2 cups mashed, overripe bananas
4 eggs, beaten
1+ cups coarsely chopped walnuts.

Directions
Preheat oven to 350. Grease and flour 2 loaf pans.

Sift together the first three ingredients. In a separate bowl, mix butter, sugar, eggs, and bananas until well blended, then stir in the walnuts. I like to keep the walnuts on the chunky side and I always add extra--my favorite part of a good nut bread.

Combine the banana walnut mixture with the sifted dry ingredients. Divide evenly between the 2 prepared loaf pans.

Bake about 30-40 minutes or until a knife inserted in the center comes out clean. Cool 5 minutes in the pan, then turn onto a wire rack to continue cooling at least 15 more minutes before cutting.
