I would just say to make sure the eggplant is well cooked. Otherwise, it is really nasty and bitter.

They differ in whether you fry the eggplant in crumbs (air fry? ) or grill it or bake it.

Giada grills the eggplant.

I went with frying. It is not a quick dish but it was Saturday afternoon so I had the time..

I put flour in a paper bag and shake stuff inside. It seems to coat more uniformly than by patting, which you can do later, or not.

No mess.

as well as a traditional rolatini made with lasagne noodles

This place has great food, huge portions, very good prices and is a bring your own wine place. The owners are hard core Democrats, too.

Prima Pasta and Pizza, Hulen Drive at Granbury Road just south of the railroad tracks. Closed Mondays. Just in case you are in Fort Worth and want to check it out. Our Democratic Woman's Club has lunch there after our monthly meetings; usually about 30 of us.
