I added the carrots and cashews

ingredients:
16 Boston, bibb or butter lettuce leaves
1 pound ground chicken breast
1 large onion, chopped
1 cup chopped carrots
4 oz chopped cashews

2 tablespoons minced garlic
1 tablespoon reduced-sodium soy sauce
1/4 cup hoisin sauce
2 teaspoons minced fresh ginger
1 tablespoon rice wine vinegar or red wine vinegar
2 teaspoons Asian chili pepper sauce (see Note)
1 can (8 ounce size) sliced water chestnuts, drained, finely chopped
1 bunch green onions, thinly sliced
2 teaspoons Asian sesame oil


directions:
Rinse lettuce leaves, keeping them whole. Set aside to drain.

Cook chicken in a large skillet over medium heat, stirring often to break up the meat. Add onion, carrots, garlic, soy sauce, hoisin sauce, ginger, vinegar and chili sauce. Cook until the meat is crumbled and brown. Add water chestnuts, cashews and green onions. Cook until onions begin to wilt, about 2 minutes.

Stir in sesame oil. Arrange lettuce leaves on the outer edge of a platter. Spoon meat mixture in center. Allow diners to spoon meat mixture into lettuce leaves and eat like a taco.

I've also wrapped them in wonton wraps and steamed, serving with a post sticker sauce I concocted and warmed a bit:

1/2 cup reduced sodium soy sauce
1 teaspoon rice vinegar
1/2 teaspoon toasted sesame oil
2 teaspoons sugar
1 whole scallion, trimmed and sliced
1 tablespoon minced garlic
Juice from 1 lemon
2 tablespoons water

That sauce is just amazing and I really really enjoy this recipe. I am a bit heavy-handed with the Sriracha.

Do you steam or fry your pot stickers?

I like them both ways.

I use hot chili oil instead of Sriracha in my sauce. Just a few drops goes a very long way.

I'm starting week 4 of a fitness boot camp tomorrow and trying to eat better.

I need a self-imposed boot camp right here.

But it's chilly and my down comforter is so warm and the water is full of seabirds for me to just watch....

Of course, a trash TV marathon is appealing as well.

Enjoy the snow. I miss it (sometimes).

Pretty much the last thing in the freezer, but that's ok - we plan to move on Tuesday.

Also have some fingerling potatoes and excellent carrots from the farmer's market.

Looking forward to it.

Right now we need groceries and a bit more social life, so we are moving to a bigger town.

Other times, we want to get as isolated as possible.

And then there are the times when we have to go over to *America* for a variety of reasons (mainly repairs, maintenance or to see family), but that's only every 3 months or so.

While very relaxing, it has it's challenges, believe me.

I think they take everything they are about to throw out on the mainland and send it over here.

But that's ok, I've really enjoyed all the stuff I got at the farmer's market before we came over two weeks ago.

and grilled ham & Swiss cheese sandwiches. I know that roasting makes even the poorest looking tomatoes give up their inner tomato, but these pathetic things are tomato-ly challenged, to put it nicely. Let's just say they aren't home-grown vine-ripened picked-at-the-last-minute yum-they-smell-so-tomatoey good. So we'll see.

and had a horrible texture.

I think soup or sauce is the best thing you can do with them this time of year.

And tomato soup with a grilled ham & cheese is the ultimate in comfort food, imo.

Looks like three-cheese Italian sausage (it's made with cheddar, mozzarella and romano), red and green bell pepper, onion, mushroom, garlic.

So, either sauteed and over pasta with a white sauce or an Italian soup in a tomato/veggie broth base...I'm leaning to a slow simmered soup.

Appetizer = Tuna ceviche with a spicy avocado sauce

Dinner = Scallops in a burr blanc with glazed carrots and sweet potatoes

crispy tofu, banana peppers, roasted green onions, balsamic mushroom sauce, mayo, and mustard. It came out well. Everyone liked it. Definitely a recipe I'll have to write down.

the original plan was to wrap the whole package in foil and toss it in the oven, but i'll be a son of a biscuit if i'm not out of aluminium foil, so it's in the skillet.

making this from all recipes, but with about twice as much parm. i've made it before and it's .

we might have a salad, but that's if my husband puts it together. i worked about 11 hours today and this is about all i've got.

I ate too many plain fried meatballs before dinner, as usual. I still had room for the pasta and I even had a small bowl of butter pecan ice cream for dessert.
