Pan-seared mesquite tuna

Ingredients
2 thick tuna steaks
olive oil
mesquite rub

Directions
Coat the tuna steaks with olive oil and a generous amount of mesquite rub. Let marinate for an hour or so at room temperature. Then, heat a non-stick pan over high heat until extremely hot. Sear the steaks for about 2 minutes per side. Warning: don't overcook or the steaks will get dry and tough. It's better to under cook the tuna than over cook it. Serve immediately.
