(35,746 posts)I'm taking a shortcut, though, by using Trader Joe's frozen eggplant that's already breaded. This will cut down my work considerably.

I havent had eggplant in forever...sounds yummy.

(175,751 posts)I went out to lunch today to celebrate Patrick's Day and am not very hungry. Think I'll have a couple of waffles, the frozen variety because they're easy. Strawberries to go with it.

Pancakes usually never taste as good as they smell to me, but I love the De Waffelbakker brand.
