Quick & easy tortellini spinach soup

Ingredients
3/4 pound tortellini
1/2 bag baby spinach, chopped
1/2 pound mushrooms, sliced
32 ounce can/box chicken stock
1 onion, chopped
Black pepper to taste

Directions
In a medium size pan, sauté the onions and mushrooms. Meantime, cook tortellini according to directions. Add the chicken stock to the mushrooms, onions and and black pepper and simmer while the tortellini are cooking. When tortellini are done, drain and add to the soup along with the baby spinach. Cook for a minute or two and serve piping hot.

cooked and crumbled Italian sausage for a complete meal in a bowl.

Have also been known to play wih adding various seasonings.

And on one occasion subbed beef stock for the chicken stock.

Haven't made this in awhile. Thanks for posting. I will have to work it into he menu sometime soon.

Is she a strict vegetarian?

If so, you may want to sub vegetable stock for the chicken stock. Or maybe use a tomato base stock.

In any event it sounds delish. Enjoy!

She usually doesn't eat red meat but will occasionally. Especially when she's home from school and I'm doing the cooking. So I usually cook seafood or chicken when she's around.
