1. Pacific cod chowder

After work, I'm going to make a fish and corn chowder. I went to Trader Joe's yesterday, to buy some KC BBQ sauce (love it), when I noticed TJ's had pacific cod 'nuggets' for $3.99/lb. Perfect for chowder! I have a some nice cod loins in the freezer, but was hesitant to chop them up them just for a chowder.

So, fish chowder it is tonight!

I have to keep it simple for tonight. I made cole slaw from red and green cabbage with my favorite slaw dressing, which has dill pickles in it, yet is somewhat sweet. Slaw also has toasted almonds in it.

I made a big pot of Earl Gray tea for iced tea. And a hamburger made from grass-fed beef and served on one slice of low carb bread; I'm using spicy mayonnaise that the RG made the other night. Topping with a slice of sweet Vidalia.

Super busy with garden and moving details for my auntie today. Not much time to cook, but this will be a nice summertime meal.

But I let it sit and while it could be less done, it's pretty darn delicious. The gravy is good, with rice and green beans which are my absolute favorite vegetable. If I had to pick one green vegetable that I would have cooked every night of my life, I'd happily select green beans

I'd miss broccoli, I'd miss spinach and collard greens, mustard greens and Oh my word, how I would miss cabbage, but green beans? Unthinkable to be without them.

But thankfully, I didn't. It was new method. Glad I tried it for home first before I did it for guests, though!

Made a simple balsamic vinaigrette and added kalamata olives, grape tomatoes and red onion. It hit the spot.

brown rice and whatever beans i pull out of the cabinet. maybe tomatoes and/or corn. cheese and sour cream in it for me, as well.
