what's for dinner - saturday, july 26th

i have a pork loin roast in the crock pot with bbq sauce, garlic and onion and i think we'll have broccoli slaw, corn on the cob and rolls with it.

i have a few huge chicken leg quarters in the fridge and i'm thinking about tossing them on the smoker so i don't have to cook tomorrow.

We picked up some local cheese today and I'm going to put that on some crackers. And the last of the melon.

Just a lazy evening after some more exploring and a lunch visit with friends.

it's looking to be a mellow weekend here. i'm going to bust hump in the kitchen today and take it easy tomorrow. maybe we'll do a picnic tomorrow.

And you can keep it simple. Some bread, salami, cheese and a nice bottle of wine. Maybe some olives if you just must have something green, or some fresh fruit.

Your lunch with friends and exploring sounds like a dream, cbayer.

The RG gave me an idea for a salad with some ingredients he'd purchased for the dinner party, but that he didn't have time to make. It is for a Fennel-Zucchini Salad. Here's how it came out.

The ingredients are fennel, zucchini, and lemon. For the vinaigrette, fresh tarragon, tarragon vinegar, and the usual olive oil. Toasted pine nuts and chopped fennel fronds for the top.

This is the salad, but at the time I took the photo I didn't know it needed the toasted pine nuts.

It is quite delicious but I had to do quite a bit of adjusting. I needed extra mustard in the tarragon vinaigrette and extra salt, too.

So this is for tonight, along with cold chicken and shrimp served with hoisin sauce.

Now, enough playing in the kitchen and off to the gardens.

I am so glad that RG is able to give you ideas without taking over.

We did have a lovely day. Explored one of the incredible medieval towns, where you can get lost wandering around the little walkways.

I had no idea that this was here and I feel extraordinarily fortunate to be here.

4. Pacific cod fish and chips

The local store had a sale on Pacific cod fillets, so... why not!

I just made a classic cole slaw, and I'll probably bake the potato wedges in the oven (olive oil, granulated garlic and onion, S&P, paprika) for 30 mins, turning 1/2 way through.

As for the fish batter, I'm still experimenting. Back in the day (late 60s, early 70s) we had a local seafood guy in Rhode Island who made the best fish and chips. The batter was light and crunchy (not cake-like). So, I'm going to try using our local clam cake mix (ubiquitous in RI), with some club soda, and see if that does it. Heavier than a tempura, but way lighter than a beer batter.

I'm going in...wish me luck. Film at eleven.

Once saw a place that offered lobster chowder and I went whaa? Who would not simply plate a lobster with melted butter, black pepper and a nut cracker?

It's like Montreal seasoning only not as salty. I ended up grilling trout fillets topped with garlic butter.
