Related: About this forumwhat's for dinner - thursday, july 31st
we'll probably just punt tonight and it won't be terribly interesting.
now i'm just trying to kill time waiting to see another doc about the ankle and gods know how long i'm going to have to wait.

(31,169 posts)I think.
Most likely with a slice of tomato and onion with a dab of pesto or slice of Parmesan cheese, on homemade focaccia bread.

(146,218 posts)Could you share your recipe for focaccia?
it's long and will take a while for me to type up though, and I'm not certain it's better than others. Here's one I've been wanting to try from a cooking instructor I've met and highly respect, Peter Reinhart.

(146,218 posts)The bread here is so good and so cheap, but when I get back to the Western hemisphere I will need bread recipes again.

(146,218 posts)We went to two amazing and completely different gardens. Sensory overload.
So for dinner, we had the rest of the truffle risotto and a caprese salad.
What's going on with your ankle? Is it worse, not getting better? What kind of doc are you waiting to see?
fizzgig
(24,146 posts)glad you had a good time at the garden.
swelling has subsided a bit, pain is not nearly as bad but it still hurts quite a bit. i'm managing with one crutch because it's such a pain to have both hands tied up.
i'm waiting for an occupational doc since it happened in a dark parking lot at work and i have to see them for the worker's comp. i've been here for an hour already and i'm starting to ache a bit. like a bone head i left my ibuprofen at home. i just hope they get moving soon because i need to be at work at 3.

(146,218 posts)When part of the issue is covering someone's ass from a legal perspective, medicine gets even more convoluted than usual.
At the very least, you should be excused from work, don't you think?

(24,146 posts)biggest hassle is the clinic and the fact it had to be a walk in.
my boss won't be bothered if i'm late. i could have taken a few days off but didn't want to waste pto on something so stupid. i don't get specific sick leave, just a general pool. my job is a desk job so it's not a problem to go in.

(106,886 posts)I steam the peppers a bit then layer the ingredients - ham, rice, cheese; ham, rice, cheese.
Run under the broiler to brown the top.

(24,146 posts)i need to make them more often.

(175,735 posts)Probably in some chicken stock, if I need it. More of the carrots I cooked the other night. Two pounds lasts a long time for me.
Hope that you get to see that doctor sooner rather than later. I bet that hurts.

(2,016 posts)I've been craving this for a while. While at the grocery today, I saw fresh cleaned squid. Soooooo... calamari time!
Not sure if I'll have a marinara or cocktail sauce for dippin'.
I'll make an antipasto on the side, too.

(35,667 posts)Once again I made them late in the night (finished at 1:30 a.m.) and was too tired to have them so I will have them tonight.
Instead of chicken, I stuffed them with ground pork, which I picked up at the all-night Stop 'n Shop on the way home. The place is great for people who work late.
Note: pic from recipe
They are hot as Hades! But I love hot food. They are stuffed with cumin, tomatoes, onion, toasted almonds, and garlic in the mix, along with the pork. The recipe called for this creamy topping which cools down the hotness considerably. In it is crema Mexicana and toasted walnuts with a little half n half or milk to thin it. The poblanos themselves are quite hot. I unintentionally touched my skin after handling them and it was burning. Even this a.m. my hands were burning from just grabbing a nibble after cooling them from the oven.

(37,549 posts)I'm going to put it over polenta made with jalapenos and olives.

(20,234 posts)I might have to try that.
but you gotta be careful with those peppers. husband made the mistake of handling a whole bunch of them without glove when he was working kitchens. not a good move.
i also have a very nsfw story about capsaicin-induced pain. that was awful.

(20,234 posts)I'm a little limited. Chopping is out. Anything that involves taking off wrist guards or getting them wet/slimy is out.
So I'm thinking the husband can grill some steaks and I can probably manage pumpkin raspberry muffins, if he doesn't mind opening the can of pumpkin mush for me.

(24,146 posts)hope you feel better soon. i wrecked my ankle and it's a bit hard to move around the kitchen while on a crutch, so i haven't done any cooking since the weekend.

(112,167 posts)Zap it for 7 minutes, remove plastic cover and add extra cheese to top, zap it another 7 and a half minutes. A slice of buttered bread on the side. What else do expect from the guy that posted the 1-800-Adopt-A-Dude thread in the Lounge?

(24,146 posts)he's usually home three or four hours before i am and it gives him something easy to eat when he gets home if there aren't any leftovers or sandwich stuff.

(2,016 posts)It's not like its Banquet (tm) frozen crap, Souffer's it's OK.... I'd really like to make home-made lasagna for all. But I live in a land where Italian food is called....Eye-talian.
But ... Stouffer's is OK, I just add extra garlic.
