Turkish Lentil Soup recipe

Ingredients
1 onion, coarsely chopped
2 cloves garlic, minced
1 or 2 carrots chopped
2 T tomato paste
2 quarts chicken stock
3 c red lentils
1 potato, peeled and chopped
2 T paprika (the smokey version works best)
Mint, chopped (optional)

Directions
Saute onion in olive oil until translucent. Turn down heat, add garlic and cook an additional minute or two. Sprinkle paprika over onion/garlic mixture and sauté for 30 seconds. Add remaining ingredients and simmer for 45 to 50 minutes. Puree with a hand blender until smooth. Serve topped with fresh mint if desired.

I love lentils any way I've ever made them. Never thought of adding paprika and mint before.

My wife complained that the recipe wasn't like what we ate all around Turkey. I love this recipe. But she did find another one that was like the soup we had when we were there. Coming soon folks.
