what's for dinner - sunday, jan. 11th

skillet chicken thighs tonight with sauteed zuchinni and squash on the side.

i was able to confirm that the lower heating element on my oven has gone bad and that i did not, in fact, screw up those breads a few weeks ago, so no oven for the time being.

happy sunday and go broncos (sorry, indy fans)!

Leeks, carrots, celery, rosemary. Maybe some shirataki noodles if I go to the store. Grated parmesan to go on top.

I want to bake some zucchini fritters to go as a side dish.

Chicken thighs are very tasty, fizzgig. I cooked some in a skillet with lots of garlic a week ago and they were so good they barely made it to the table. I'm glad you have an answer to what happened to your bread.

i love them but never think to buy them. and fritters sound like a great idea, maybe i'll fry up some of those instead.

not having the oven is a bit of an pain and fixing it will have to wait until after our trip, i'm not hot on the idea of having people in the house while we're not here, but i'll be fine for a few weeks.

I'm going to try http://www.iheartkitchen.com/pecan-crusted-sweet-potato-balls/ with winter squash instead of sweet potato. I thought I was going crazy, I decided to make that, then spent forever googling the sites I'd been on - but I was googling squash and pumpkin.

I need to use up some ground turkey, so I guess a taco salad kind of thing to go with it, since I also have a lot of avocados to use up.

The husband is asking what this is.
I'm trying to explain that it's sweet potato and pecans, except without either of those ingredients.

My little guy (beagle) drank some water finally, and seems to be keeping down some boiled chicken breast. I had thought he was already sliding into organ failure, since he hadn't gone to the restroom at all in about 20 hours, and had thrown up what little water he drank earlier today, but this evening he seems to be doing a little better again. Maybe he will make it through the week after all.

We had a kid friendly meal consisting of grilled pork loin, mac & cheese, sauteed cabbage, kale/citrus salad, potatoes with peppers & onions, field peas, and a big ole' nasty chocolate cake with chocolate icing plus ice cream. The cake was that Hershey's cocoa recipe that makes a big, fluffy cake and lots of buttery icing. There is never any leftovers with that cake.

and i just use olive oil for the saute. there will be red onion and garlic in there as well, with a bit of salt and maybe crushed red pepper.

I don't want to go out, but we are obligated.

It will probably turn out to be great, but right now, I just want to stay home.
