My grandma's legendary potato pancake recipe

Ingredients
5-6 Idaho potatoes, pealed and coarsely grated
1 onion, finely grated
1 t nutmeg
4 eggs, beaten
4-5 T flour
oil for frying--I used avocado oil

Toppings
Sour cream
Paprika

Directions
In a large bowl, grate the potatoes. Let them sit a while and squeeze them several times to remove as much moisture as possible. Add onion, eggs, and nutmeg. Combine. Tben add flour and mix. Heat oil in frying pan and add potato batter and fry on both sides until nicely browned and crispy. Work in batches, putting cooked pancakes in a 250° oven to keep warm. Serve with sour cream and paprika.

I use leftover mashed potatoes, with eggs or without. Does anyone recall a pancake that was cooked in an iron skillet, using potatoes and eggs I think? My great-great grandparents came from Germany around 1900. My grandparents made some kind of a pancake dough they called a German name (probably not the real name) that was chopped up as it cooked. We always put syrup on it and ate it with wilted lettuce.

Just the other day, my boyfriend asked me is I knew how to make these, and I don't. It was on my list of things to do to google a recipe, and you have saved me the trouble!!

Who was a chef in a castle in Poland. I think it's a recipe that was common among Polish Jews and Poles. Not sure who came up with it first.

applesauce? Just curious. I love potato pancakes! It wasn't a big staple in our family unfortunately! I need to try to cook them again! Thanks for the recipe!

He made the best potato pancakes I ever ate. Other than the nutmeg it's exactly the same.

Reads just like my favorite recipe, but never used nutmeg. I will try it next time I make them.

I will say that it does look good, although I've never used avocado oil.

I usually use olive oil, but you can heat avocado oil to a higher temperature without it smoking. I got it at Costco.

A whole teaspoon of nutmeg seems like a lot. Otherwise it looks like my recipe except lately I've been using potato starch in place of flour because of the gluten-free person at the dinner table.
