Do you use Escarole? Any other ideas?

I love escarole, but other than a salad or to add to my home-made chicken soup(Italian grandmother's recipe for soup and meatballs), I don't know any other recipes for it.

I'd like to find some recipes that use escarole without having to buy a bunch of other ingredients.

BTW: The chicken soup I make is typical Italian chicken soup with meatballs a la 'Nana'. No special ingredients other than logical stuff I add to the soup after I boil up the chicken for use as broth and meat.
I make the meatballs and add them to the liquid to cook after the chicken is cooked, removed, and chunked up. Veggies added to the liquid after meatballs are cooked. Sometimes I add a can or 2 of low sodium chicken broth if needed. I use Swanson's.

Can someone tell me where the term "wedding soup" came from? Never heard of this until a few years ago.
To me, it is chicken soup with meatballs.

It was just Italian chicken soup before that.

Escarole can be cooked like most greens, with garlic and red pepper flakes. I did find one recipe that looks just a little fancier (and a lot better). http://www.foodnetwork.com/recipes/tyler-florence/braised-escarole-with-garlic-and-lemon-recipe.html
