Lemony scallop pasta

http://cookingwiththemark.blogspot.com

Ingredients
3/4 pound scallops
1 t lemon zest
1/2 juice of fresh lemon
1/2 pound mushrooms
5 shallots-chopped
1 c chicken stock
1/2 c white wine
1/2 pound spaghetti

Directions
Cook spaghetti. Set aside. Saute shallots in olive oil until soft. Then add mushrooms and cook for about five minutes. Add stock and white wine along with zest, and lemon juice. Cook for about a minute and then add the scallops and cook for a minute or two. Fold pasta into the sauce and serve(heaven forbid!) with Parmesan or Romano cheese.

I've been looking for a way to use them again sometime, and I just might try that recipe with spaghetti squash instead of spaghetti when we have visitors in in a few weeks, thanks!
