one of my besties is going to be in town (unfortunately for a funeral), so we're going to meet up at the french-vietnamese restaurant we love so much. i'll either get the spicy peanut beef or their grilled chicken spring roll bowl unless something jumps out at me.

(19,459 posts)I am the official eater of good cooking but, alas, when it comes to my own attempts to feed myself...if it can't be eaten cold out of a can I would probably starve to death.
She'll be back in a couple of hours.

(19,459 posts)My sweetie left me her recipe card with the following note attached:
"Here is the recipe. I don't really measure, and I always use at least twice as much balsamic vinegar. It is good with Cherry or Mixed Berry jam too. I usually use chicken breast tenders."
I am assuming you will know what she means by "chicken breast tenders."
RECIPE:
Sauté together:
2 teaspoons olive oil
1/2 small, mild onion, chopped
2 teaspoons minced fresh thyme (or 1 1/2 teaspoon dried thyme)
Add:
4 boneless, skinless chicken breast halves (about 1 lb.)
Cook 4 minutes at medium, turning once
Add:
1/3 cup seedless blackberry jam
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
STIR UNTIL JAM IS DISSOLVED
Reduce heat to low.
Cover, and cook approx. 10 minutes, or until chicken is just cooked through.
Serve chicken drizzled with pan juices.

dinner tonight will be nice. my family has been eating at that restaurant for at least 25 years and it's our go-to for birthdays and other family occasions, my husband and i even had our rehearsal dinner there. my grandparents always took us there when they'd visit from new york and go to know the owners. it got to the point where grandpa would tell the owner we wanted a certain type of soup and a couple of pu pu platters and to just bring us a good variety of entrees from there. it's still under the original owners and i've never had a bad experience with them.

(22,767 posts)serves banh mi. They're always in great demand and have the longest lines, always, which is why I've yet to try them out when they've been at some of the art fairs I participate in. I just don't have time to wait that long while a neighbor keeps an eye out on my booth.

(175,755 posts)I used to live near a very upscale French-Vietnamese restaurant. It was a special occasion place because of the prices, but the food was incredible. Enjoy!

(24,146 posts)it's just not something i can get all that fresh here. i wish i weren't so squeamish about the thought of cleaning fish because i'd totally have my husband catch them to eat. i love trout.
but i am jealous of your meal

However, I dig trout. Yums on the freshwater fish! (Trout w/ tomatoes is my thing.)
I''m not a fisherman.. but I am thinking of buying a fish license here in SoCal... not for trout, but from whatever I can catch. Legally.
It's not like we have a lot of water, or anything... <shesh>\

(22,767 posts)and not even in the mood to eat, let alone cook. But, of course, husband insists he must eat, something about being hungry. (He started to fix it himself but I kicked his noisy self outta the kitchen.)
We took a break Thursday night and had take out from local, family owned burger joint (He had burger, I had fried fish sandwich and we split an order of their really good crinkle fries, because all of their servings of everything are just huge.) and last night had Chinese take out.
Tonight is back to the pork tomato sauce. Out of angel hair, so tonight it's Soba buckwheat noodles. Fixed it for him that way Wednesday night and he like it. Good thing.
Picked up a couple of new library books, so one of them will be my repast for this evening.

(24,146 posts)the husband would rather starve than cook for himself most nights, so i still wind up cooking just so i don't have to hear about how hungry he is it's a good thing he's damned good looking.

(22,767 posts)But I can't stand all the noise. It's faster, easier and less painful if I just go ahead and do it myself.
I'll probably just have a bowl of cereal later if I end up wanting anything.

(2,012 posts)Saute thin chicken breasts in olive oil; cut into 2X2 in. slices. Spread spicy marinara sauce in bottom of glass baking dish and press chicken over it. Mix chopped sauteed spinach, ricotta, parmesan, romano, mozzarella cheeses, thin sliced mushrooms, chopped green onions. Stuff large pasta shells with mixture and place over chicken. Pour marinara sauce over all and bake at 375 covered with foil for about 30 min.; take off foil and bake for 15 minutes until bubbly.
