We're having a buffet in class tonight. This is an adult class of public speakers, so they should exercise some pretty good judgment on what to bring. There are many excellent cooks and bakers, plus some noteworthy take-out restaurants in the area. One student is bringing empanadas from the most famous place for empanadas in Elizabeth.
I'm bringing a fresh salad and it's mostly made from garden ingredients. I have a feeling my students don't know much about gardening, and I want to get them interested. If there's time, I may try to show them a few pics from my garden, too, but since we're backed up on speeches, that may not happen.

a dish to make also using dried mushrooms. I have plenty of garlic, onions, scallions, roma tomatoes, peppers, a little parmesan. Have several kinds of pasta and rice on hand. (eta) I also have about 10 spears of homegrown asparagus. A few more fresh herbs: sage, marjoram and maybe one leek. Does anyone have ideas.
Tonight, we'll finish up the leftovers from the weekend. Lima beans, redskin potatoes and whatever else is lurking in the fridge.

(35,713 posts)If I were making dinner, I'd duplicate that skillet meal of Galileo's. It's getting down to 49, so I had to cover my garden peppers and bring in the seedlings.
Or homemade buns with kielbasa. Oh, does that ever sound good, MerryBlooms.
I couldn't eat a thing, though, as there were so many things brought by class members: two big bowls of fruit, watermelon, cantalope, kiwi fruit, blueberries, strawberries, pineapple, and honeydew.
There were many, many bags of alternative-type chips (this is a very health-conscious class) and someone brought homemade guacamole. I put some guacamole on my salad. Then there were the empanadas and....homemade pierogies, too! My tossed green salad with ranch dressing. And someone brought two no-sugar apple pies--they had the right amount of sweetness just naturally.
So we had a terrific time and it was the perfect end to a very good class.
