I'm trying to figure out how to braise beef. Trader Joe's was sampling it yesterday, and oh, was it delicious! I was lucky to find a delicious 2-lb+ grass-fed, no hormones/antiobiotics roast just before I went to TJs (and at a somewhat reasonable price, too).
If I can't figure it out, I may cook it in the pressure cooker.
I have various delicious vegetables in the frig, such as broccoli, all cleaned, washed, and ready to steam or saute in garlic.
Went to a fabulous dinner last night--was served seafood (clams, shrimp) over linguini. Tomato sauce, homemade. I could not believe the portion sizes our hostess dished out. Huge! White wine, salad tossed with Italian dressing, and garlic bread. Really enjoyed that, as I have not had seafood in quite a while.

(9,833 posts)out of the fridge. I grilled chicken thighs/breasts and was again reminded why I usually don't grill thighs--they make such a mess on the grill. Light brown basmati (awesome stuff) rice, field peas, roasted cauliflower, steamed broccoli, tomato salad and cornbread. Then we made a large dent in the pecan tassies, wedding cookies, chocolate balls, rum balls. Naps all around.

(35,691 posts)Do they fall apart? Does the skin stick to the grill? If that's the case, would it help to put them in one of those grill baskets? I'm asking because I love dark meat, grilled. It's so nice here I was thinking of doing something similar.

(9,833 posts)them, then used a very small amount of marinade since they were skinless to keep from sticking to the grill.
If anyone knows of a better way, let me know. I like grilled dark meat, too. It has so much more flavor. Maybe I should just use a frying pan on stove top.

My dad doesn't seem to, and the only thing he does differently is spray his grill with PAM constantly, (he cleans his grill meticulously all the time as well, whereas I just give a quick brush before and after). I have tried PAM beforehand, but it didn't work. I've tried brushing them with olive oil. That didn't work. I've tried flipping them more. That didn't work. I've tried not flipping them until they were nearly 100% cooked on one side. That didn't work.
So I'm no help, LOL. I just put up with it because I like the taste, but yeah, they make a huge mess.

(9,833 posts)be cooked at a lower temp for a longer period of time. I was trying to watch the grill and cook the rest of the dinner, so I wasn't able to hang around the grill.

(6,123 posts)We are having Prinskorv (small, Swedish sausage) and home made butternut & sage pierogis. I'm pretty sure that calories don't count between Dec. 24th & Jan 2nd.

(5,998 posts)Mrs. Snark and I are still doing the vegetarian experiment, but our son is home from college and was in a pepperoni mood.
She wanted margherita and I was on a black olive jones. Cheese was Trader Joe's Quattro Formaggio, which contains no mozzarella.
The crusts were made from bread flour, kicked-up with granulated garlic, onion powder, oregano, basil, smoked paprika, and turmeric.

(8,646 posts)And I actually did have a beef roast that I cooked in a pressure cooker. Love my pressure cooker. I purchased it 2 months (3? can't remember) ago. Best. Purchase. Ever. Fall apart tender roasts every time.
Oh, and all the trimmings. Mashed potatoes. Baking powder biscuits. Salad. Asparagus. Gravy. yummy rich gravy.
Left-over goodies from Christmas for dessert. Butter tarts and various other squares. My friend brought some cookies.
But about the roast - honestly, I've braised and also used the pressure cooker and I say just go for the pressure cooker. mmmmmm.
