1. I would start here. Any sort of French sort of fennel soup....very good!

You can leave the bacon out or whatever. There are a variety of easy recipes and variations on this.

2. I like to keep it simple, so sauteed sliced fennel and onions will do it for me

I especially like it as a side for salmon or topping for salmon burgers.

5. Different parts of fennel can be used for different things, if I remember right.

I'm not an expert, and this recipe comes from cook's illustrated. And it's a hit in my family:

COD baked in foil with fennel and shallots, serving 4.

1 large fennel bulb 1/4" strips
2 large scallions sliced thin
4 TB softened butter unsalted
2 tsp minced fresh tarragon
1 minced garlic clove
1/4 tsp orange zest
2 oranges peeled quartered and cut crosswise to 1/4 " slices
Salt and pepper
1/4 cup of dry vermouth or dry white wine
4 (6 ounce) skinless cod fillets, 1-1/4" thick

Combine fennel, & shallots, cover tightly, microwave till fennel start to wilt, 3-4 min. Stir twice halfway, add butter.

There's more but I won't type the whole thing if not necessary since I use an iPad not keyboard

Basically you are putting this in tight foil, all four, on top of veg, sprinkle each one with wine, before wrap up, 450 degree oven, 15 minutes.

This comes from test kitchen, and they are anal about everything . Don't get me wrong, I love them, but playing with the amounts and time, you might make it better

your favorite recipe for marinara and add thinly sliced, sauteed fennel. Wish the rest of my family loved it like I do.

In honor of our President, and to try and get healthier, I am going to do "Meatless Monday" tonight. I will sautee some fennel, onions, shallots, broccoli, and garlic, add a jar of tomato sauce from the pantry and serve that over some spinach ravioli. Little bit of wine, side salad and let the Iowa returns come in.

Shave the fennel, add cut orange wedges, chill. Oh, and some snips of the lacy green fennel top. Best left to sit overnight.

Simplest thing, but really fresh and nice.
