What's for Dinner, Mon., March 14, 2016

Appetizer: asiago crackers with spicy hummus

Main course: roasted tomato soup with turkey sausages on the side.

It turned nippy here. It's rainy, too. So I took some of the roasted tomatoes I made yesterday and combined them with chicken stock and vegetable broth to make tomato soup. Added cream. Used my immersion blender. Yeah, there's more to it than that, but you get the idea. So good, and so perfect for a night like tonight.

Now I wish I could snuggle up in bed with the RG or my cats instead of going out to teach my night class. But (sigh), duty calls.

I think a little chocolate is in order as an incentive to do my job on a rainy day when short on sleep, hm?

Picked up ground sirloin, stew beef, and an eye of round roast at the butcher's. Will probably use one of the first two tonight. I'm going to start prepping the eye of round to roast tomorrow, now that I'm done digging the hole for the felix jury magnolia tree for the front yard. The garden center called, they'll be over Wednesday to plant it. Which reminds me, the roter stettiner apple tree should be arriving at any time now, so I better get digging out back as well. At least the tree that one is replacing died back in 2007, so the roots have no doubt rotted away a lot more than the maple we got rid of a year ago.

fixed IP and website, my cable bill was getting too ridiculous.

We ended up doing tacos for dinner, although I had to run to the store for lettuce.

We're having leftover shrimp mac & cheese that DH threw together last night. It was a riff on lobster mac & cheese and boy, was it yummy. Two pork loins on low in the oven for a luncheon tomorrow. Hot and sunny here in Texas

...and leftover potato salad. Lotsa carbs and sodium, unfortunately!

So I'm having an apple and some celery stalks for p.m. snack.
