A pre-Fourth nerd fest. I hear bacon-wrapped shrimp will be on the grill, so that alone will make me do the 60 mile drive. Not sure what else, probably the usual cookout sides. I'm bringing cold beer.

I may have to explain how to make it to the Hubber, as my chemo fatigue is strong today. Chicken bites, in a mix mayonnaise, lemon juice, garlic, and tarragon, baked for forty-five minutes. They come out crispy and brown...a low-carb recipe for folks who miss crispy breading. Green beans and rice complete the plate.
And chicken soup for me! nothing works quite as well.

do you roast them or saute them? Sounds interesting--I'm Paleo, most of the time.

I even have tarragon growing in my garden.

Sorry you're experiencing chemo fatigue.

Recipe is from Living Low-Carb by Fran McCullough.
Mix the ingredients together and let the chicken pieces marinate. Use foil in the pan. I cook 20 minutes, turn, and cook twenty more. The chicken gets a very nice crispy brown crust!

Thanks, Cher! The doctor told me that this one might be tough (my 5th). Digestion isn't too bad but I'm seriously tired. not much longer until this is over. Oh for normal taste buds again! Although I found something that tastes good - Cheesecake! You can get a 2-slice pack at Publix and although it's something I love to make, this isn't bad.

I'm going to try this.

Bingo with the cheesecake! Love it myself. I like to buy the sampler package at Aldi. It's only around 9 and it has two-three of each kind in it. Lasts a really long time.

with family. They made thin salty-smoked pork chops on the grill, squash casserole, black-eyed peas, homegrown tomatoes and cucumbers. We took Mark Bittman's Coleslaw and a Blueberry Buttermilk Tart. Someone else brought a tie-dyed red-white-blue cake with white icing--it was beautiful! We didn't get to stay for long, but the drive up and back was gorgeous and always makes me realize why I lived in the NC mountains for 25 years and will always feel homesick whenever I come back to Georgia.

I love a drive in the mountains, too.

I had a mountain surprise today, also.

I was on my way home from the store this evening, and fireworks started going off. I realized that if I took a certain windy little road that went up to an office park, I'd have a fabulous view from a parking deck. There were two other cars there. This was the best view! The fireworks were really spectacular.

At the end, they set off the fireworks all at once, and looking down the mountain, we could hear little pockets of people applauding.

The main reason I don't go see fireworks is the crowds, so this was perfect for me.

and fireworks are a bad combination. I wish Americans would go for the "silent" fireworks that are now being used in some other countries. All the beautiful, sparkling, colorful displays without the kabooms.
