My recipe for succotash

Ingredients
1 small onion, chopped
2 cloves garlic, minced
4 ears of corn--kernels removed
3/4 pound grape tomatoes, quartered
1 10-ounce bag baby lima beans
2 T white vinegar
3/4 cup fresh basil, chopped
Black pepper to taste

Directions
In a large frying pan, heat up some olive oil and saute onion and garlic until soft. Add the rest of the vegetables and cook over medium heat for seven minutes. Add vinegar and black pepper to taste. Add fresh basil just before serving. Can be served warm, room temperature, or chilled.

Not the kernels!

I haven't had succotash since my Mom used to make it. I think I will try it. Thanks for posting the recipe!
