What's for Dinner, Mon., Nov. 7, 2016

Earlier in the day, I put some pork chops in some chipotle-barbecue sauce to marinate. Very shortly, it will be time to put them on the grill if I don't want to be grilling in the dark.

I'm also grilling vegetables: baby bok choy and zucchini slices. I'm thinking to put the grilled zucchini slices with feta cheese and sliced onion for a salad or side dish.

Dessert will be a cup of hot chocolate and a biscotti.

I also made curried egg salad today. I put two pans of sliced tomatoes to roast in the oven, as well as a couple cut up beets (that's for another, upcoming salad).

Using up the meat from yesterday's making of stock. Probably some sauteed veggies on the side, too.
