What's for Dinner, Fri., Apr. 14, 2017

Stuffed rigatoni with creamy red sauce. Mesclun salad with homemade French dressing. Salad has chopped vegetables like cucumber, tomato, and scallion.

Now, dessert. Heh. It seems there is another new low calorie ice cream in the marketplace and I have made myself the Official Cooking & Baking ad hoc tester. I bought three flavors of this new kind, "Halo." I'll be testing one out tonight. The calorie counts are similar to another type I've tried.

In other posts I've talked about Enlightened. Even the RG thought they were good, and he's what you might call a "tough crowd." The last flavor of Enlightened that I tried was black cherry and it was very good.

Pan fried pork chops
Stewed apples with raisins
Mixed veggie packet from the freezer - broccoli, cauliflower and carrots I think, although there are other options.

I'll have to pick up feta cheese @ the store next time for this. It's odd that I can poach eggs in tomato sauce but not boiling water w/o breaking the yolk, maybe the viscosity of the tomato sauce helps the cooking.

with tartar sauce with a touch of horseradish. Served with Cuban black beans and rice, coleslaw, and broiled Brussel sprouts.
