Black rice with vegetables like leeks and some others I can't remember. Cheeses, all different kinds, mixed in, too. Chicken.

(2,016 posts)Found an oddball pork chop in the family pack of rib chops I bought today. (Uneven & an end cut) So, I'll debone and slice it up for chow mein!
The oddball can always be found under the window cuts. Sneaky butchers...

(17,434 posts)We have been using the crock pot to prepare pork roasts and I have been disappointed in the results sometimes.
This afternoon I put a Pork Loin roast in the oven after looking at recipes on the web. All sorts of silliness there. Pierce, never pierce, sear, never sear, bake then broil, broil then bake. Arrgh!
Instead, I followed my recollections and instincts. After trimming the worst of the fat I did a dry rub of Seasoned Salt, Garlic Powder, Black Pepper and Thyme. I put a rack in the bottom of the pan and some water. 400 degrees for a half hour then flipped it over so the fat side was up. After another half hour I pulled it out, put it on a plate and covered it with foil.
I made some gravy from the pan drippings while the roast was resting.
Unfortunately TJ, the night shift worker, has not arisen so a full dinner is not happening.
I found some leftover mashed potatoes and had a couple of slices off the roast with gravy. It was delicious with good texture, moisture and a savory crust. The little man (all 7.2 pounds of him) gave it a two paws up while requesting a second slice.
A cool rainy day is a good time to use the oven.

(1,706 posts)which came out pretty good, steamed broccoli, and microwave hollandaise, which didn't emulsify but we used anyway. Saucepan brownies for dessert.

(2,302 posts)I decided I needed a major infusion of meat, and I wanted major comfort without major effort, so I went tacky: beef with yes, Lipton Beefy Onion soup mix. With carrots, over egg noodles. My husband was supposed to be having some defrosted red beans and rice, but he changed his mind when he saw what I was having.
Monday night, to celebrate my final chemo, is pizza from Lello's, where everything is homemade and delicious. It's so rare for us to have pizza that we're each getting our own to get exactly what we want (he's a pineapple guy).

and the meatloaf sounds delicious. The RG made one the other day and we froze some of it. Left a little out for sammiches, 'cuz I love one made with meatloaf, raw onion, on a brioche roll.
