What's for dinner Sunday, August 27, 2017

I made Grecian chicken: boneless chicken breast, cut into strips. Marinate in oregano, garlic, juice of a small lemon, and olive oil for at least one hour. Grill.

I also fixed Rice-A-Roni Rice Pilaf, a can of those refrigerator rolls, and stir fried veggies: one large carrot sliced thin, snow peas, red bell pepper, green zucchini cut into chunks, and a sweet onion sliced. You might prefer a different mix of veggies. I slice them all up and then just stir fry enough for my one serving. They keep in a plastic container in the fridge for a week, and I just stir fry them as needed.

I love this meal. I've got some boneless pork chop that I'll marinate in teriyaki sauce tomorrow or the next day and grill, then do additional stir fried veggies, and heat up some of the rice and a roll. Both the pork and the chicken freeze quite nicely. I also like to get catfish and do a lemon-pepper blackened version of that with the same sides.

We had my mother in law over tonight for her 78th birthday. We had smoked baby back ribs, corn/black bean/bell pepper salad with cilantro lime vinaigrette and a big green salad. We had a do it yourself ice cream sandwich bar for dessert with various cookies and ice creams to mix and match.

I'm curious how you make your lobster salad?? I've never made it before.

Add hellman's mayo to taste and salt and pepper. I served it on crackers as they are thin and I found when you serve it with bread you get too much bread and not enough lobster.

Most important thing is to open the frozen lobster and put it on tons of paper towels in a bowl to drain excess liquid as it thaws. I changed the paper towel on the bottom at least once to wick away the moisture. I put a plate on top of the lobster as it drains and put two huge cans of soup on the plate as pressure.

Ribs sound wonderful.

were even available! I buy the frozen tails once in a blue moon but I'll look for the tins. What a great idea to serve your concoction on crackers instead of bread. This is going on my end of summer menu. Thank you!
