French Toast

'To come up with a French toast recipe that would be crisp on the outside and soft on the inside, with rich custardlike flavor, we dried good-quality challah or hearty white sandwich bread in the oven before dunking it in a yolks-only soaking liquid enriched with melted butter. Drying out the bread gave our French toast recipe the pillowy interior we were looking for; eliminating egg whites (which contain sulfur compounds that make eggs taste eggy) gave it richness without a scrambled egg flavor; and adding melted butter gave the French toast recipe a delicious, nutty flavor.'>>>

I admit it, I love French toast on the weekends, but the addition of orange juice really makes this recipe extra good. Like any French toast, success depends so much on the bread you use. Using a very dense and fine texture bread is key, usually I buy a bakery loaf of uncut French bread. Day old bread makes it even better.


California French Toast
Adds the fresh zing of California orange juice and a nutty crunch to French Toast.

6 slices French bread, cut 1 inch thick
1 teaspoon grated orange zest
1 cup fresh squeezed orange juice
1/2 cup milk
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 eggs
1/2 cup chopped pecans or walnuts
butter for frying
confectioners' sugar for dusting

Directions
Lay the bread slices in a shallow pan. In a small bowl, whisk together the orange zest, orange juice, milk, sugar, cinnamon, vanilla, and eggs. Pour this mixture over the bread, turn once, pressing on the bread slices to help absorb the liquid. Evenly sprinkle the chopped nuts over the slices, lightly pressing them into the bread. Cover and refrigerate for at least one hour.

Heat 1 tablespoon butter in a large skillet over medium heat, add the soaked bread slices to the skillet and fry 2-3 minutes on each side or until golden brown, adding more butter to pan as necessary. Repeat until all the slices are cooked. Place the cooked toasts on a baking sheet and keep them warm in the oven until the rest of batches are fried. To serve, sprinkle with powdered sugar and drizzle with your choice of warm syrup. Orange marmalade is optional, but tastes wonderful.

Nuts ruin otherwise perfectly good food.
