What's for Dinner, Tues., Oct. 24, 2017

Gemelli cut of pasta with tomato sauce and cubed lamb.

Chopped salad with garden lettuce, and vegetables like carrots, cauliflower, scallions, etc., and topped with creamy dill yogurt salad dressing.

For dessert, tapioca pudding and cinnamon apple tea.

2. New Recipe...Ma Po Baked Tofu with green beans over rice.

This is the first time I've baked tofu cubes, the recipe promises crispy, more firmly chewy tofu. The Ma Po is a spicy sweet sauce mixed with the tofu, some cooked ground & drained pork. Cold decaf tea.

...because Hubby was getting a new computer today, and it sounded like he'd be at the Apple re-seller for hours. That didn't happen - we were back within thirty minutes, but I went with the plan: breakfast-for-dinner for him (onion and cheese omelette and home fries) and a tuna-salad plate for me. Sometimes simple is best.
