So, I had a workmate ask me how to make a Pineapple Upside Down Cake, and I shared a recipe with her. That's all it took, the idea of that old church basement favorite was stuck in my head big time. It has been years since I have enjoyed this kind of cake so I made one. Gads, I had forgotten what a treat a piece of pineapple upside down cake can be. Yummy. Plus, it has fruit on it so it's OK to eat for breakfast. YUP.

I used to sometimes do canned peach slices instead of the pineapple, also delicious.
it only takes about 5 minutes to throw one together. Peaches would be really good, so would pears.
