What's for Dinner, Tues., Mar. 13, 2018



Chicken francese, one of my favorite dishes.

Arancini: two kinds. One kind is filled with mozzarella, peas, and ragu sauce. The other is filled with pasta and mozzarella. They are coated in bread crumbs and fried. They are golden in color and look beautiful!

Romaine salad with raw vegetables like tomatoes, carrots, peppers, etc.

Dessert is streusel apple pie.

with sautéed cocktail tomatoes from Maine, loads of spinach, red onion, garlic, peas and (leftover) roasted lemon chicken pieces, some turmeric, thyme and topped with freshly grated Parmesan.

Honey baked ham. Costco sells 2-$50 gift cards for $75, tear out the coupon in the Sunday paper for $7. We get a 1/4 ham for $25. Which will give me 2 meals plus lunch meat for the week.

Since I didn't have to cook the ham, I am making green bean casserole from scratch and home made Mac & cheese.

Everything comes out of the oven in 20 minutes.
