An apple pie made out of organic Fiji apples!
My recipe is straight out of an early 1970s ed. of The Joy of Cooking (crust included). One major difference is that I use kuzu as a thickener rather than corn starch or tapioca.
I got the crust browned up (15 mins. @ 450 degrees) and now it is baking away for another 45 mins. Will be done soon.
It took 6 big Fuji apples and it cost me abt. $3 to make it. It comes out far better than some crummy old day pie for sale at the local bakery for the stunning day old price of only $20.
Nothing better than a fresh apple pie to make your weekend an absolute smashing hit!

I love the braised chicken w/fruit as well.
Can't beat the crust recipe. Often THE CRUST (the most important part of any pie IMO) is pretty fool proof I've noted over the years.
I learned how to cook via this book. Would recommend it to anyone looking for a great cookbook.
Even the sourdough bread came out good!

(7,888 posts)I love to bake but have no skills making a crust. Apple Crisp is the closest I can come to a homemade pie dessert. I can bake a Hershey's chocolate cake with fudge icing for a party.

Use ICE water. The lard/butter/shortening gets colder in the dough and therefor takes longer to melt when cooking and then forms pockets in the dough. Flakiness via ice water. Who knew?

(20,868 posts)I used to be into macrobiotics and I found kuzu. I use it when I can as a thickener. It is rather flavorless but it does a great job.
As for kuzu itself, it is an old remedy for sickness of the stomach/intestines. It has been used for thousands of years as a remedy esp. in south America.
You have to have a mortar and grinding bowl to grind it into a powder. You sift the kuzu with brown sugar over the top of the apples and let it all set while you roll out the dough for the crust. Don't forget to add a tsp. of vanilla to the mix before you leave it to set.
Good as can be and a healing food besides!
