What's for Dinner, Thurs., June 21, 2018

Ribeye steaks sauteed in a cast iron skillet.

Rosemary roasted potatoes.

Fresh corn off the cob, mixed with zucchini.

Arugula with chopped vegetables like fennel, celery, carrot, and scallion. A little red pepper.

For dessert, a couple Biscof cookies with Nutella and hazelnut spread on them.

To drink, I'm having a mango coconut kombucha.

Tuna steaks seared on a hot grill so the insides are still raw. Topped off with fresh cilantro and lemon with wasabi on the side.

Grilled slices of marinated eggplant.

Garden salad and the greens are from my fiancee's garden. It's our first bounty of 2018!

Da Vinci chianti.

Grilled apples and Sambuca for desert.

I hope everyone enjoys their dinner tonight.

Hard shell beef tacos. TJ made the ingredients and we built our own. The cheese was a white tangy cheese she grated. I don't know what kind it was, but it worked well.

FLFC seems better and was not allowed much activity today. He's been using the leg lightly and is not holding it up. He ate better today and neglected to rate the food. He allowed me to touch the leg and the kneecap seems in place. We are supposed to be taking him on short walks as therapy, but if he sees another dog or a bird he goes nuts. He tries to sound and act like he's 50 pounds instead of the 6-1/2 he really is. We decided to slow him down (easier said than done) by not walking him and see how it goes. Thanks for asking about him.
