Hey patricia, here's a swai recipe for ya.

Fillets come frozen in individual plastic bags and are a bit soggy when thawed. Early in the day I take them out of the bag, gently press them in paper towels and put them on a rack in the fridge until ready to use.

Make a mixture of equal parts panko crumbs and grated parmesan cheese. Season it lightly with salt, pepper and a sprinkle of paprica. Separate a couple of eggs and whip the whites to homogenized them a bit.

Lightly salt both sides of the swai, dredge the skin side only in egg white then crumb mixture. In a lightly oiled nonstick skillet brown the fillets crumb side down until golden brown. Do not turn! Transfer the skillet to a preheated 375f oven for 10 minutes.

Serve crumb side up with traditional fried fish sides like Cole slaw or fries and such. Garnish with lemon slices for squeezing or tarter sauce.
