What's for Dinner, Mon., Sept. 3, 2018

It is so hot here that the only thing I can get excited about is a fresh fruit plate. I plan on using a lettuce base and putting the fruit on top--not mixed, but individually, so one can choose whatever fruit is appealing. I have salad dressing already made, which is very light cream-based, and semi-sweet, using a drizzle of agave.

The fruit will be watermelon (my fave!), pineapple, apples, blueberries, and maybe some tangerine segments. On the side will be a nut assortment of macademia, walnut, almond, pecans. I'll also have chopped peppermint and spearmint, in case anyone wants to sprinkle that on top.

We have some cold roast beef, so maybe we'll have that later--much later, like after dark.

I'll make a spritzer with sparkling water and cherry juice. Maybe a twist of lime.

We have a heat advisory on until tomorrow. Tough to garden in this weather, but the plants have to have water and screens to see them through this heat wave.

Steak, baked potato and salad/garden tomatoes. For dessert: cheese cake w/strawberries.

About the only thing that is allowed is the salad and a few strawberries, but I decided I needed a treat. Surely, one meal won't kill me.

I need a new outlook on life and boost in my spirit. I think the above will suffice. If you don't hear from me again, I was wrong.

At the moment I'm having some Gouda cheese and crackers with sliced fresh tomato and ice water.

I'll likely have something more, but I haven't made a plan.

TJ and FLFC have, on day two, already reverted to the old schedule. They disappeared to bed around noon when I was out. They haven't been seen since. FLFC's menu will be discussed when he gets up around 8 pm.

with avocado, cotija cheese, and a fresh tomato-jalapeno salsa. Flan for dessert, in a while. The mojo pork was pork shoulder cooked in a citrus and garlic marinade. I froze the leftovers in three freezer bags. My son suggested nachos for one meal, not sure what I'll do with the rest. That's a lot of meat for three people!
