What's for Dinner, Wed., Sept. 12, 2018

First up, fruit salad with lettuce base. I have some very fresh ruffly lettuce that's purple. I'm using an unusual kind of kiwi. The RG told me it is from So. Africa. It's very pretty--kind of pinkish orange. Reminds me of a papaya. Also red grapes, chopped pear, and blueberries. Toasted pecans on top. I'll tell you my secret for a good dressing for this type of salad: Marie's coleslaw dressing. Sounds weird, but it's good.

After that, the last of the chicken curry meatballs.

For dessert, a low-carb vanilla ice cream bar covered in chocolate.

The weekly market in Tréguier, France! Pork, bacon, sausage, vegetables. And wine. Of course.

Having a wonderful time with brother and friends here! Once in a lifetime trip!

2. taco "lasagna"

Very basic, large torillas as noodles, ground protein with taco seasoning and anything you like ion tacos,,olives,black beans,fire roasted maters, and sweet corn here for starters. Instead of water to taco mix,,1 jar salsa of choice and juice form tomatoes.
assemble by tortilla, layer of taco , tortilla,cheeses, etc etc,,, bake ,, dollop of sour cream on top and yummy

Full recipe was on Mondays' Whats for Dinner thread. To todays' I'll add a handfull of frozen spinach 2/3 min for more color b/4 serving, the last zucchini cut into coins & green pepper strips & more coconut milk & less water. When I reheated Mondays leftovers for Tuesdays lunch, I reheated w/ coconut milk & I liked the taste / texture better w/ more coconut milk.

It really is a clean up the veggies in the fridge meal.
