Seclusion Special½ TBS. Oil (canola)
¼ tsp mustard seeds
½ tsp turmeric
1 Cup brown rice (dry)
1 Cup mung beans (dry)
6-7 Cups water (can be more)
1 ½ tsp cumin
1 tsp curry powder
¼ tsp pepper
¼ tsp ginger powder
1 tsp salt
½ Cup finely chopped cabbage
¼ Cup chopped green pepper
½ Cup finely shredded carrots
¼ Cup raw peanuts (optional)
Marinade:
½ Cup oil (canola)
1/3 Cup lemon juice (fresh)
½ TBS salt
½ TBS tamari
1 TBS honey
1 tsp basil
½ tsp oregano
In 1974, our spiritual teacher, Yogi Amrit Desai, spent an intensive period of seclusion in a small meditation home. During that time, his wife, whom residents affectionately call Mataji, prepared his daily meal and carried it up the hills to his retreat house in the woods. One of the special creations at that time was this light, high-protein dish. Re-treat residents became enamored of this dish and dubbed it Seclusion Special, in honor of Yogi Desais special retreat. You need not enter seclusion to enjoy its flavorful goodness and nutritional benefits!
In a saucepan heat the oil and add the mustard seeds low heat. Cover. When the seeds begin to pop (watch close to prevent burning), add turmeric and stir the mixture. Fold in the rice and beans, coating them with the oil-spice mixture. (smells great!) Add water and the remainder of spices, mixing them thoroughly and letting them simmer until the grains and beans are well cooked (approximately 40-50 minutes). Combine the cabbage, peppers and carrots with the cooked rice and beans, and set aside.
Prepare the marinade and pour it over the grain-bean-veggie mixture, blending it in thoroughly. This is a hearty dish which can go either hot or cold, depending upon your preferences and the time of year. Its nice to eat in seclusion but equally fun in a large gathering.
