What's for Dinner, Thurs., Dec. 27, 2018

Turkey cutlet, breaded. Using cornmeal and thyme for the breading.

Shredded Brussels sprouts with apple and mustard seed. Also has toasted pecans. A little honey is stirred in for sweetness.

Dessert: cup of hot chocolate with marshmallows that I bought at WF. They are some kind of specialty marshmallow. Tangerine slices and toasted, mixed nuts.

I've made a few of her recipes before and they've been great. Plus, she's just so charming!

Please let me know how it works out.

On edit. You should check out her channel. She does a lot of vegan recipes that are very good. I only eat meat about once a week, and I'm almost at the point of stopping altogether. My conscience is weighing on me. Too many rescue stories from The Dodo, I guess.

general tso’s tofu

ingredients
For the general Tso’s tofu:

2 tbsp tamari or soy sauce
1 tbsp apple cider vinegar
10 ounces firm tofu (275 g), cubed
6 tbsp cornstarch
Extra virgin olive to taste
2 cloves of garlic, minced
For the sauce:

3 tbsp tamari or soy sauce
3 tbsp apple cider vinegar
3 tbsp vegetable stock or water
3 tbsp cane, coconut or brown sugar
1 tbsp cornstarch
1/8 tsp cayenne powder


instructions

Mix tamari and vinegar in a bowl until well combined.
Add the tofu cubes and let rest for at least 5 minutes.
Drain the tofu and transfer 1/3 of the tofu cubes to a freezer bag with 2 tbsp of cornstarch and toss to coat. Repeat this step with the rest of the tofu and cornstarch. Add more cornstarch if needed.
Cook the tofu cubes in a skillet with a little bit of oil over medium-high heat until all sides are golden brown. Remove tofu from pan and set aside.
Add the garlic to the skillet and cook them over medium-high heat for about 1 to 2 minutes, stirring frequently until they start to golden brown.
To make the sauce just mix all the ingredients until well combined.
Add the sauce to the skillet and cook until it thickens, stirring frequently.
Finally, add the tofu, stir and cook for 1 to 2 minutes more.
Remove pan from heat and serve with some white rice and garnish with sesame seeds and chopped chives (optional).
Keep leftovers in a sealed container in the fridge for up to 5 days.

I will double the sauce, I like saucier dishes, and flash fry broccolini or broccoli.

Also I have baked cornstarch dusted tofu cubes before on a parchment paper covered pan. I like the slight crust, slightly melty interior. Oven baking would lessen the oil usage.

We're spending the week on Cape Cod. It's beautiful in the off-season.

A client sent me a box of steaks from Allen Brothers so we brought them with us. Creamed spinach and a baked potato. Egg nog with brandy for dessert.

The sun just set and the sky is glowing a luxurious red and blue.

My Landlady(!) and I enjoy finding adventures to pursue. We also like to eat well!

Leftover turkey, mashed potatoes, gravy and jello salad. Last of the
xms buffet. Still some ham left and meatballs for snacks. Midwest winter food. And still a few xms cookies and pies. When I make xms cookies I eat one of each just to make sure they are ok and then I don't eat any of them. Cannot say that for pecan and blueberry pie however...I try to send people home with as much food as I can get them to take. It's sort of my xms present to friends and family because we don't buy gifts anymore-we're all in our 60's and don't need that. Kids are all in their 20's so they get money. Makes life a lot easier.
