I like to use a double boiler setup with just a SS bowl sitting on a deep pan with just a small amount of boiling water. Then I whisk 4 large egg yolks with some melted butter thats just warm enough to stay liquid. Then season at the end with some kind of acidic liquid, salt, cayenne.
