Meatloaf.
I made coleslaw with Chinese cabbage, Cara Cara oranges, chopped peaches, and toasted walnuts on the top.
Smashed Yukons with butter, chopped parsley, salt & pepper.
A friend is bringing over Japanese chocolates for dessert. He had a sample of them in some place like Grand Central and wanted to buy them, but they were out, so he ordered a couple boxes. They came in. They are in tiny squares about an inch square and come with their own refrigerator pack because I guess they are so creamy they have to be kept cold. Dusted with cocoa.

We have a couple of ripe avocados so they'll become a guacamole.
Dark chocolate for dessert.

(13,569 posts)Mid century because they were so popular in grandma's day. Canned salmon was used then, but I use the pack that is skinless, boneless in a pouch these days. Salmon, some crushed saltines, egg, dill weed, lemon juice, diced onion, some milk. Mix, drop by big spoonfuls into hot buttered skillet and pat into patty shape. Brown and cook through. Serving this with big servings of barely wilted spinach. And redskin potatoes for those who aren't cutting carbs.
Just plain old timey food.
childhood...have to have canned spinach with bacon grease and fried potato crispies with salmon patties. just grated raw potato mounded up and fried in a half inch of oil so the edges and surfaces are super crispy and the centers are kind of chewy.

(38,553 posts)I put a little mashed potato in mine, and coated them w/ crushed crackers, and pretty much used the same ingredients as you did (onion, dill, lemon, etc) They came out quite tasty.

(55,007 posts)put some jarred rub that was a gift on them, more to use it up and get it out of cupboard than anything. if one of the men in the house want to take them out and finish on the grill that would be great but it is pretty cold today so who knows about that. would prefer cole slaw as a side, but need to use up some fresh brocolli instead and I am feeling too lazy to even make THAT into a slaw so it will get steamed or nuked. don't feel like potatoes either so not sure of an additional carb, no pork and beans in the pantry...might add some frozen corn as another side.

(1,706 posts)topped with Mediterranean-seasoned cream cheese and then bruschetta tomatoes. My husband and son don't love cod, but they liked this pretty well. (It was a riff on this recipe: https://www.allrecipes.com/recipe/152653/baked-cod-with-boursin-herb-cheese/?internalSource=hub%20recipe&referringContentType=Search&clickId=cardslot%2011).
The rest of dinner was freezer finds: basmati rice to sop up the juices from the fish, collards, and for dessert, monster cookie bars.

Afterwards I might have some fruit. There are strawberries, mandarin oranges, bananas, and apples to choose from.

FLFC has already had some chicken tenders. I expect he will want to try our chicken. He was in bed 18 out of the past 24 hours, so he doesn't have much of an appetite.
