I checked out a book called "Cali'Flour Kitchen." It's by Amy Lacey and it has cauliflower based recipes. It's for people trying to do low-carb, which the RG is doing but not me. Nevertheless, I am happy to cooperate. He is in away on business until late today so I picked up a cauliflower and thought I'd make up a light dinner for us. I'm favoring huevos ranchero pizza with avocado and eggs atop a cauliflower pizza crust.
Another interesting one is "almond ricotta and caramelized onion sandwich." It also has tomatoes and is served over a cauliflower pizza crust.
Not sure which one I will do--or maybe I'll do both!

(32,971 posts)No lettuce to use as a wrap, so I am making rice. A sauce made with Hosin, low salt soy sauce, water. Frying minced onions, garlic, water chestnuts( canned, drained, rinsed patted dry to get the 'canned taste off) & carrots shreds, then mixing that with ground chicken.
Decafe tea.
Chicken fajitas.

The rest of my Heaven on Earth cake left over from Sunday dinner.
A glass of Cabernet Sauvignon.

(38,555 posts)My sister brought them up w/ her when she came up this past weekend to do my folks' finances, but since dad had emergency gall bladder surgery on Sunday, they are off the menu for him and have now become my dinner.
(Doctor said that his gall bladder burst quite some time ago... maybe even a year ago. We got lucky that we found this before it became even more serious than it was. His surgery took twice as long as it should have because since the rupture he had developed a lot of scar tissue. There was quite a mess to clean up inside of him. He's doing well--in fact he looks healthier than he has in quite some time. I think he didn't complain because he was afraid that he wouldn't be home to take care of my mom. I told him that he needs to take care of himself or he REALLY won't be around to take care of Mom.)
I went over to my folks and cooked them some skinless chicken legs, baked potato, steamed green beans and a garden salad. Have to keep things low-fat for dad for a while. I'll be cooking for them every night until further notice. I don't mind the cooking at all, but my mom's advancing Alzheiner's Disease makes it difficult because she tries to help and she ends up throwing me off by turning up burners or turning off the oven or adding ingredients that make no sense at all (she tried to add a stick of butter to a coleslaw last month).
My dad has been taking the burner knobs off the stove so that if he needs to take a nap, she doesn't set the house on fire. It's scary.

Side of refried beans and green beans. Geez, I just realized how many BEANS this is!

(1,706 posts)in the pressure cooker. It has plum jam, sambal oelek, ginger, and soy sauce in the sauce, cooked with chicken thighs chopped bite size. Rice and broccoli for sides.

(5,657 posts)Soft, white corn tortillas with ground pork, cilantro leaves, onion, and a generous squeeze of lime. Bottled tapatio sauce and sea salt to finish. So good. I had three. 😃
