One banana and 2 cups vanilla wafers - What to do?

I poked around in the fridge and found some heavy cream that needed to be used and some fresh strawberries.

So I made a small banana-strawberry pudding, topped with whipped cream. Made 4 medium servings. IT WAS DELISH! I am going to make this again as a full size dessert. The only that I would do different is to slice the strawberries and lightly mash about 30 minutes before starting the pudding, so they will release more of their juice. When I make again, I am going to work the measurements.

I used to eat with cottage cheese for lunch. Your dessert sounds like something my family would love. Did you make a cornstarch pudding? Please share your recipe!

I have been making pudding for so many years, that I don't use recipe. I kind of figure it by 2 cups of milk which I what I used this day. If I am making a full recipe, I use 4 cups of milk. 2 cups of milk will take about 1/3 cup sugar, 3 or 4 tablespoon flour, 1/4 teasp salt. 1 whole egg or 2 egg yolks, 2 tbsps butter and 1/2 teaspoon vanilla.

I mix the sugar, flour and salt while they are dry, making sure the flour is thoroughly mixed with sugar to prevent lumps. If I want a meringue, I use egg yolks, saving the whites for meringue. if I am topping with whipped cream I use whole egg. I put egg in small bowl and beat really well.

Put sugar/flour mixture in pan, add milk and mix well, cook on low, stirring all the while and it will gradually thicken. If you are not sure if it will burn , use a double boiler so you are cooking over water. When it is almost ready, a few little boils will start in the pan. Spoon a little of the hot mixture (about 2 tbsps) into the beaten eggs, stirring all the while, add a little more of the hot liquid to the eggs, this is to warm the eggs, so they will not turn to scrambled eggs when added to the hot liquid. Once the eggs mixture is in the pudding, stir constantly for a minute or so to cook the egg part (about 1 minute). Remove from heat and add butter and vanilla. Let cool some and it is ready to use.

I am sure there are many recipes for pudding online that might be easier to follow than mine, 'The vanilla wafer box used to always have the recipe printed on the side of the box.

this for Sunday dinner. Unfortunately, I and another family member have egg allergy. Guess we will have to just make do with cornstarch pudding.

I finally tried out the spiralizer that came with my food processor. I LOVE it. It

doesn't have as many blades as the handcranked one I could never get to work properly. I predict more spiralizing in my future !
