What's for Dinner, Tues., June 4, 2019

Pork en croute. The slice of pork rests on sauce made by the RG that has French cream cheese, Greek yogurt, mint, half 'n half and one other ingredient I forgot. To go with each bite of pork is something different: marinated mushrooms, artichokes, and tomatoes, both sun dried and fresh tomatoes.

Fresh peas with ham bits.
Steamed asparagus.
Fennel salad with red onion. Salt, olive oil, oregano.

For dessert, a mix of fresh strawberries and nectarines.

I got two beautiful boneless pork chops, egged and breaded them then pan fried them in olive oil with lemons on top. Served with Earl Grey’s mango chutney.

Corn-off-the-cob and steamed broccoli for the side dishes.

Bosc pears and chocolates for dessert.

3. Mixed Fajitas

I hadn't made fajitas in years, but was cleaning my kitchen cabinets and found a grill skillet that I hadn't used in years. Decided to try it on my new stove by making fajitas.

Used a chicken breast and some boneless rib eye steak scraps left from cutting a big rib eye into steaks, cut all in thin strips. Made marinade of Worcestershire sauce, lime juice, finely minced garlic, black pepper and a little soy sauce.. Also used sliced onion and green bell pepper which I added to the marinade.. Skillet got really hot on my new stove, meat cooked quickly as did the veggies. Served with refried beans made from left-over pinto beans. Also made some guacamole and pico de gallo. Topped off with fresh flour tortillas and Mexican crema. Homemade peanut butter cookies and watermelon for dessert.
